Bar, Cafe and Restaurant only one block away from the main square. Perfect place for lunch, hang out on the sunny patio, have a few drinks at the big cozy bar around Happy Hour and ideal for candle light dinner. Capacity for groups up to a 80 persons. Of course we serve beautiful pastry and have Bolivian fair-trade coffee from our Italian machine.
It all started when Sayda Quispe helped cooking for the big Aymara family at her home under the volcano “Tunupa” at the Salt Lake of Uyuni. She learned from her grandmother and her mam how to prepare the traditional Bolivian plates, backing her own bread and take care of the many little brothers and sisters. Everything in and on an old stove with lama-shit fuel! The rest of the days she had to work on the Quinoa fields, for study there was no money, especially not if you are a girl… At her 17 years, she decided to look for work in Hotels and Restaurants in Uyuni, La Paz and Chile.
After meeting her husband from the Netherlands and getting married, Sayda finally could create her dream: opening a restaurant! First, they set up the Café Florin in 2008 in Sucre with some other Dutchies, meanwhile selling souvenirs to travelers. Sayda’s first own restaurant had to wait till 2014 , when she opened the Cosmo Café on the main Plaza of Sucre and very quickly it became a success thanks to the unique flavours and great service provided by a great staff.
After being trained full time and double shifts(!) by a International Chef from Australia called “Red”, Sayda now wanted to know more and more and finally got the opportunity to go to study on a serious level. For that, she had to go to the booming center of Gastronomy nowadays: Lima- Peru. She took a full sabbatical year to go to the USIL (Universidad San Ignacio de Loyola) to graduate for Culinary Art, Barista and Patisserie. Coming back, she needed a bigger kitchen to work in for all those new ideas and “Amsterdam” was born.
She showed the world that you can get anything done with the right energy, when you love what you do; even if you are born in a clay hut at the salt deserts!!!
